Description
Vesuvian broad beans in oil
They are grown on the slopes of Vesuvius, in mineral-rich volcanic soil, on a hill near the sea where the breeze blows. These geographical conditions favour the quality of the beans grown here, prized above all for their tender texture and flavour.
They can reach 30–40 cm and contain up to 10–12 pods.
This crop is very popular and highly valued as a fine example of biodiversity: the broad bean is among the legumes that naturally release nitrogen into the soil, making it more fertile. This is why Vesuvian farmers grow it in the vineyards, and above all in the gardens before planting the Piennolo del Vesuvio PDO tomato and other summer vegetables.
Indeed, throughout the Neapolitan area broad beans are a food with real character; eaten fresh, they are part of the rituals of Lent.
